The only way I have ever set one is to do the drive and stop tests, and adjust from there. I have one on my roadster, and who knows where it is set, and so far no ill effects have happened. I know it is not set at factory settings, because I turned it in and out quite a bit trying to decide which one of the two I was going to use. Decided on the Wilwood, cause the front brake are the same brand.
I think I would just do some go and stop tests at different speeds untill you happy with it.
